I don't know how much the original recipe writer had in mind. However, it's being used in a marinade, which he says he reduces to use as a sauce for the finished chops. So I would suggest not using more than a heaping teaspoon worth. That way you don't end up with overly garlic tasting chops or a gritty pan sauce. But that also depends on you and your tastes. It's a marinade, so the seasoning amounts are not carved in stone never to be broken. You can use more or less to suit yourself. Actually, granulated garlic disperses flavor best if it has some oil or fat to do the work, and this recipe doesn't include any. So I would more likely use a freshly crushed garlic clove myself, instead of the pulverized dry variety. You do what you think best.
