What do you do with the other ¼ of the onion?

Clarifying my query above: the recipe calls for 2 onion quarters, but one quarter is never deployed. I was not inquiring after the ½ of the onion from which the quarters were taken.

Hi MJ! Just want to reiterate Lori T.'s helpful answer on your other post here in case anyone comes across it and has the same question. In Step 1, you'll char the onion left whole. In Step 2, you'll chop the remaining onion and cook it in lard.
