Another way to go is to get an olive bread recipe using instant yeast from a reliable source. Here's one from Jim Lahey, famous for his bakery and no-knead bread recipes.

I wish I could help there! I'm not as experienced with instant yeast baking. My guess is add flour and water to the recipe to equal the levain I make (leave out the sourdough starter). Then go with perhaps 1% instant yeast to total flour weight.
