Hi Kittie! I'm not sure what your mixture looks like, but it should be pretty wet before it goes in the oven—that'll help it turn out moist and delicious. Hope you enjoy!

I thought it was just ok, but hubby liked it a lot. Going forward, I would make my regular recipe, which has more ketchup mixed in, along with some Worcestershire sauce, but would cook the onions prior, would not use any water, use one less egg, and would cook on the sheet pan. Really liked that. I think the author would do better by specifying amounts in grams, and specifics like type of onion. Makes a really big difference.

I can’t know for sure, but here’s what I'm thinking. Is it possible that your onions were very watery to begin with? Also, English muffins come in different sizes— maybe yours are small and Emma's are large? Same thing with eggs. Please let us know how it turns out. If it makes you feel any better, I was once given a recipe for meatloaf by a diner owner who swore by pouring water into the pan with he meatloaf halfway through cooking. He said it made the meatloaf moister. (It was moist, but it was also baked in a loaf pan and not on a sheet.) Good luck. I’m guessing it will still taste good.
