Have a look here (there's a good family recipe by Merrill Stubbs) and at Food and Wine (another good one by Paula Wolfert) for details.
Slow roasting time - about 40 minutes average per pound.

Oh yes, Tori G, only saw after I wrote that you already had Merrill's recipe.
And are you making potatoes roasted in duck fat as a side?
And/or some red cabbage?
