Wish I knew the magic number for correct temperature when cooking turkey! I've recipes that differ from 150-165 degrees! Butc

My butcher told me to take out at 155 and rest to 160. (9.5 lb breast)

Hi Lesley!

We recommend turkey breasts register 165°F in the deepest section of the breasts and in the legs and using an instant-read thermometer for most accurate results. Since a turkey continues to cook once it's out of the oven, you can pull it out once it registers 160°F and then make sure it gets to 165°F once it rests.

I like to use a thermometer with a probe and remote so that I dont open the oven door and lose heat.
