Is flour weight incorrect? This lists 2 C/280 g, but 1 C of AP flour is usually considered to be 120/125 g.

You'd be surprised at the variations in the weight of one cup of flour, across recipes. It's entirely a function of how each particular person measures the flour into the cup measure. A few years ago, I did a quick survey of "test kitchen approved" recipes here on Food52, finding that the conversions ranged from 120 g per cup to about 145g per cup. That is why I will always select a recipe with mass (gram) measures over one without. Unless you know how much a particular recipe author's cup of flour actually weighs, you run the risk of using the wrong amount, going with a straight 120 g / cup conversion.
That said, I realize that many of the recipes I've posted - ones from years ago, before I started using a scale in baking - contain volume-only measures. I have wanted to test and revise, but now live at 5,000 ft, where baking is quite a bit different. ;o)

Thank you! I agree, I always try to use mass recipes, and then sometimes I find a volume one that I have to try, and I’ve had some, shall we say, interesting results. In this case, it surprised me that the difference was so significant (I usually rely on the KAF site as my “standard.”) Appreciate your feedback!

I looked up the recipe these cookies are based on— Sarah Kieffer's pan banging chocolate chip cookies— and in this recipe, 2 cups of flour are listed as weighing 284 grams. Technically I think you’re right about the usual conversion of cups of flour to grams, but since the recipes were created with this much flour, I’d make it as written.
