What’s the best bakeware material to bake a citrus cake? Thank you.

I prefer metal for cake baking as well, but I’d rather bake a pie in ceramic. And I do flan in Pyrex. I think they’re all reasonably interchangeable but these are me personal preferences

While it's dependent on the cake, I'll just use whatever I have on hand.

Most of what I have are value-priced aluminum baking pans from the nearby restaurant supply store and they seem to work well.
