Can you use breast meat instead of the thighs?

NMG - if the breast meat is all you have on hand or you prefer it, yes, go ahead and use it in this dish (with 702551 helpful tips).
But if you're starting from scratch and like all kinds of chicken meat, you'll get more flavor from tge chicken thighs.

You could but if you just followed the recipe's instructions word-for-word, I guarantee you that by the time the rice is fully cooked the chicken breast meat will be overcooked and rubbery. Overcooked chicken breast is a resolutely miserable affair.

If I tried doing this, I'd pull out the chicken breast pieces after Step 2, set aside, and add them back to the rice porridge about 10 minutes (more or less) before the rice is fully cooked, the time depending on how thick your chicken pieces are that day and how fast your rice is cooking. This would provide a better chance that the rice and chicken end up being cooked to their respective ideal doneness levels at the same instant.

Take notes for subsequent attempts.

This is a porridge so overcooking the rice a little is better than overcooked chicken.
