Marilyn Fox - I didn't know, so I looked it up. News to me, but egg whites apparently freeze well. If you can freeze raw whites, are cooked far behind? Haven't done it myself, so if you are thinking of this for a holiday meal, I would test a sample in advance, then decide to do or do not (Yoda here), based on results.
