Can I Bulk Ferment in the fridge overnight?

I was wondering if I can Bulk Ferment these in the fridge? I am scaling the recipe and need to make for a large audience.

Yes, absolutely! I would let them ferment for at least 75% of the bulk time, then pop it into the fridge.

Thank you!! This is an amazing recipe and brings back so many childhood memories. Plus it removes the raisins, which I always thought as the only downside to hotcross buns
