Please help, Tahini & Miso help needed!

I love to use miso & tahini in sauces & glazes on fish. Often it burns before the fish is finished. I’ve seen them used many times in cooking shows so how do I keep it from burning?

Don't apply the glaze at the beginning.

Add it toward the end of the cooking. If you are grilling consider finishing over indirect heat or reduce the heat and monitor closely.

Whenever you glaze fish and similar items, you will need to pay very, very close attention.
