Can I just skip the first steps cooking the chicken in the recipe or video and start where the recipe says/shows how to make the gravy?

I am going to make smothered chicken. I want to cook the gravy and chicken separate.

Giving a link to the recipe you want to use would be helpful. I am tempted to write that by NOT cooking the chicken and gravy together, you would loose any of the chicken-y flavor the bird would impart to the gravy.
