Here's a great article from epicurious about cooking turkey in a convection oven. The general consensus is that convection cuts cooking time by about 25% so be sure to check your turkey a lot earlier than you normally would. http://www.epicurious.com...

Alternatively, reduce your oven temp by 25 degrees. And in the end, you're not roasting a turkey for time, but rather to a temperature of 165 degrees.
