Do I roast the Judy Bird covered with foil, or uncovered?

Yes, it should be roasted uncovered, but watch for darkening spots and cover those as needed. Hope you like it!

I've never made the Judy Bird (but am making one today!!) but I'd not put foil on until about 1.5 hours into the cooking time. Or if for whatever reason it's starting to look very dark sooner, I'd put it on before then. Have fun!! ;o)
