Butter for cookies?

It's going to be a big cookie year here. What's your favorite butter for cookies?

Always unsalted. My daughter the pastry person loves Plugra and it is expensive. I am fine with whatever organic unsalted butter is on sale.

Always unsalted, of course. Except for Merrill's mom's http://www.food52.com/recipes...
