Butter Tarts
Author Notes: This recipe is from an old tattered 5 Roses Cookbook that was my mom's (she passed away in 1983). She baked them a few times a year but the best time for them was Christmas. I used to make them all the time but with peoples tastes changing from sweet to savory I haven't made them the last few Christmas's.

Makes 1 dozen
- 1 Egg
- 1 cup brown sugar
- 1 cup currants
- 1 tablespoon butter
- 1 teaspoon vanilla
- Beat all until full of bubbles. Drop from teaspoon into a pastry lined muffin tin and bake in a quick oven. 425 for 15 to 20 minutes.
