Cauliflower Popcorn

This recipe is simple and easy and a healthy treat for the kids. You can really experiment with any spices you like. Nutritional yeast can substitute for cheese and Indian spices like turmeric lend a buttery look. —2eatwellRD

What You'll Need
Ingredients
  • 1 head cauliflower
  • Spray oil (like Pam)
  • 1 pinch Salt
  • 1 pinch turmeric
Directions
  1. Preheat oven to 425.
  2. Chop cauliflower into small, popcorn sized pieces and lay out onto parchment covered cookie sheet.
  3. Spray cauliflower with cooking spray to coat. Sprinkle with salt and turmeric (or any other spices you are using).
  4. Roast at 425 for 25 minutes or until crispy. Serve in a bowl as you would "popcorn."

I love roasted cauliflower! I made a version last night inspired by Stephanie Izard's dish at the Girl and the Goat in Chicago. Roasted cauliflower with toasted pine nuts, panko bread crumbs, fresh mint and pickled peppers. It was truly amazing!
