Roasted beets and clementines

Author Notes: This is a bowl fill of jewels which will create a glow non any table!

Ingredients:
1 pound beets
1 8 oz. Can of clementines or equal amount of fresh.
Bunch of fresh mint

Roast, peel, and cut beets into bite sized pieces. Mix with drained can (or peeled and separated fresh) clementines. Sprinkle with chopped mint. Serve warm or cold.
