Author Notes: So called because, well, look at the photo. I wish I could have uploaded a .wav file to play the music from the original arcade game to go along with it; failing that, you can just hum Weird Al Yankovich's song "Pac-Man", set to the tune of the Beatles' Tax Man. Serves 4

  • 1 pint brussels sprouts
  • extra-virgin olive oil
  • 3 cloves garlic, smashed, skin left on
  1. Preheat oven to 375 degrees F. Using a paring knife, cut the brussels spouts in half, and then cut out the core of each. This allows the leaves to separate a bit while cooking and get nice and crispy.
  2. Toss the sprouts with a bit of olive oil, spread on a baking sheet along with the smashed garlic cloves and sprinkle with salt and pepper. Bake 20 minutes or so, until nice and golden. And crispy.

I read the headnote looking for the story -- how did you get on this kick? (I pictured you cutting out a blemish, holding up the sprout, saying, That looks like...) We should have locals soon to try it with. I love the simplicity.

I'm totally on board with your recipe. It's exactly the same way we make it in our house. I think roasting is the best way to do brussel sprouts - love to see the husband and the older son fight over the crispy outer leaves!
