Author Notes: The Indian pico de gallo, made with cucumber, onion, tomato, cilantro and chilis and vinegar to spice it up. This goes well with any Indian rice dish. amreen

Serves 6

  • 1 yellow onion
  • 1 peeled cucumber
  • 1 tomato
  • 1 jalapeno
  • 1 1/2 teaspoons cilantro
  • 1 tablespoon white vinegar
  • salt to taste
  1. dice the onion, cucumber and tomato into small pieces.
  2. finely chop the cilantro
  3. deseed and dice the jalapeno
  4. mix all these ingredients in a bowl with the vinegar and salt to taste.
