Author Notes: Its a variation of Red Red with shrimp. —chow and chatter
- 2 cups soaked black eye peas
- 1/2 onion
- 2 tomato
- 1/2 cup wild shrimp
- 1 teaspoon chili flakes
- 2 cups vegetable stock
- 1 tablespoon red palm oil or veg oil
- 1 dash salt and pepper
- heat oil and saute onion until translucent then add tomato and reduce down to a paste. add the vegetable stock, shrimp and black eye peas and simmer for 30 minutes.
