Red Beet Hummus in a Rush

I saw a gorgeous pic on Pinterest called, Red Beet Hummus, that was a vibrant and rich red that only a beet can have. I didn't bother to read the recipe because I figured that one just added beets to a basic hummus recipe. I was wrong. My red beet hummus was pink. Turns out, it was a delicious error. This is the fast way to make a hummus. Roasting your own beets and cooking dried chick peas would definitely be tastier but if you are in a rush, this will do nicely. What You'll Need
Ingredients
  • 15 oz. Canned chick peas
  • 4 Cooked beets (around 8 oz. I used packaged, cooked beets from Trader Joe's)
  • 2 Garlic cloves, peeled
  • 1/4-1/2 cups Tahini
  • 1 Lemon, juiced and strained
  • 1/4 cup Olive oil
  • 2 teaspoons Salt
  • Pepper to taste
Directions
  1. Drain chick peas and place in blender. Add remaining ingredients and process until smooth. Taste. Might need more salt or lemon juice, depending on how you like your hummus.
  2. Put in a dish and drizzle a little olive oil on top. Done!
