Zucchini & Mozzarella Pancakes

My mum use to make these to use up extra Zucchinis when they are in season. YUM! If you like parmesan cheese, you can do 1/2 mozzarella 1/2 parmesan also. —lesidhe

What You'll Need
Ingredients
  • 2 cups Grated Zucchini
  • 2 eggs beaten
  • 1/4 cup chopped onions
  • 1/2 cup all purpose flour
  • 1 cup mozzarella cheese (or 1/2 mozzarella/1/2 parmesan)
  • 2 tablespoons olive oil
  • salt to taste
Directions
  1. Combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt to taste. Stir to combine ingredients. Heat a portion of oil in a skillet over medium-high heat. Cook as you would pancakes. (Drop heaped tablespoons of mixture onto skillet and cook a few minutes each until golden. Great served with Salsa and Sour Cream for dipping!

To spice up this recipe even further you can add grated carrot, use 1/4 breadcrumbs with seasoning and 1/4 flour combination, add garlic, chilli..the possibilities are endless!
