Summer Goulash
Author Notes: My mother created this recipe one summer with vegetables from the garden. Now once the tomatoes ripen we can't wait to have some! - NaddaChef
Serves 4-6
- 3 Good Sized Potatoes
- 1-2 Medium Yellow Summer Squash
- 1 Zucchini
- 1 Large Ripe Tomato
- Wash and peel potatoes and cut into large chunks. Slice squash and zucchini into large chunks. Peel tomato and cut into chunks as well.
- Put into pot and cover with water. Boil until tender. Add salt and pepper to taste. Enjoy!
