Summer Goulash

Author Notes: My mother created this recipe one summer with vegetables from the garden. Now once the tomatoes ripen we can't wait to have some! NaddaChef

Serves 4-6

  • 3 Good Sized Potatoes
  • 1-2 Medium Yellow Summer Squash
  • 1 Zucchini
  • 1 Large Ripe Tomato
  1. Wash and peel potatoes and cut into large chunks. Slice squash and zucchini into large chunks. Peel tomato and cut into chunks as well.
  2. Put into pot and cover with water. Boil until tender. Add salt and pepper to taste. Enjoy!
