Jam Cake with Black Walnuts
Author Notes: This recipe has been handed down for generations in my husband's family. One aunt knew the recipe "by heart". It's what all the men want
for their birthdays. It is often served with caramel icing. - celiehenshaw
Serves 20
- 2 cups sugar
- 2/3 cups lard
- 2 eggs
- 2 cups buttermilk
- 3 cups all-purpose flour
- 1 1/2 teaspoon cloves
- 1 1/2 teaspoon allspice
- 2 teaspoons cinnamon
- pinches salt
- 1 teaspoon vanilla
- 2 tablespoons cocoa
- 2 teaspoons soda
- 3/4 cups jam
- 3/4 cups black walnuts
- Heat oven to 350 degrees.
- Cream sugar and lard.
- Add eggs.
- Beat well.
- Sift flour with cloves, allspice, salt, soda, cinnamon and cocoa. Add to sugar mixture alternately with buttermilk.
- Add jam and nuts.
- Makes three layers. Bake 25 minutes or until toothpick test shows it's done.
