Roasted Curried Root Vegetables
Author Notes: Quick, healthy and easy. Add your favorite vegetables, mostly root vegetables, add curry and you have a hearty healthy side or main dish. Note: You can buy cleaned, cut root vegetable in a mix from places like Trader Joe's. - nbert
Serves 6-8
- Red Potatoes
- Sweet Onions
- Parsnips
- Rutabega
- Turnips
- Sweet Potato
- Carrots
- Beets (optional)
- Cauliflower (optional)
- olive oil
- Put vegetables in a roasting pan or pans.
- Add curry powder liberally, as well as salt and pepper to taste and olive oil.
- Cook for about 30-45 minutes on 450 degrees, stirring every 15 minutes.
