Minty Tomato Dip
Author Notes: In India one of the most common evening snacks are Samosas or Kachoris and they are usually tried with very common tomato sauce from a bottle. It was one this evening when I wanted to try my hand on making Samosas and it did come out well if not very good, and like always I was hunting for the ketchup bottle in the fridge only to realize it got over long back and I forgot to put that in my shopping list last weekend ... damn !!!
I had to come up with something .. and that's when I started throwing things in my food processor ..grate.. grate... blend .. blend ...and yummy ! It took me 2 minutes and I came up with this amazing yummy dip ... how easy was that :)
Today when I saw this event, immediately I knew what to make and share with you all. Hope you guys like it :) It goes amazing with tortilla and even with chips.

Serves 2
- 1 medium tomato
- 1 tbs lemon zest
- 2 tbs lemon juice
- 1 red chilly
- 3 cloves garlic
- 10 - 15 mint leaves
- salt
- In a food processor , add tomatoes, mint leaves and chilly and grate it
- Now add the lemon juice and lemon zest and blend it for another minute
- Take in a bowl , check for salt and spice. I love spicy dip and so added 1/2 spoon chilly powder to the dip.
