Corn, Bacon and Clam Stew

For this week's special contest, we went on a field trip! Amanda visited the kitchen of Char No. 4, where chef Matt Greco showed her how to make his Corn, Bacon and Clam Stew, with bourbon and other good things that just scream summer.

Char No. 4 is definitely on the list. Have eaten there a couple of times with our kids. Always delicious.

Those are some nasty burns on Chef Greco's hand - poor man! - it is no fun to have to work around heat when you are nursing burns - hope you are feeling better, Matt!
This dish is soooooooo good; I've made several versions of it already - once with salmon and once with shrimp - haven't been able to find good clams, yet. Living on MD's Eastern Shore, I think this would be incredible with chunks of jumbo lump crab - mmmmmm!
