Fresh Sriracha (aka, home made 'Rooster')

In the video below, Merrill makes edamame2003's fiery Fresh Sriracha (aka homemade 'Rooster') and demonstrates a cool technique for protecting yourself from pesky hot pepper burns (if you don't happen to have surgical gloves lying around).

This may be a stupid question, but why would anyone go to the trouble of making Sriracha when store-bought is so cheap and just as good (sometimes better).

hi ryanbisson-why does anyone bother to cook their own food anymore when fast food is so convenient and cheap? for me, its knowing what I'm eating, the freshness of the peppers, the process and not using ingredients that grow from the ground like potassium sorbate, sodium bisulfate and xanthan gum.

Thanks for the video treatment merrill! you are much more graceful than I was making this. I forgot to cover my hand and suffered some minor consequences. happy to see that its flavor translates as a fresh version.
