Make the Most of Your Zest

Our friends at The Kitchn have a simple tip for making the most of your citrus zest next time you make an orange-scented shortbread, lemony ricotta bar, or minty grapefruit cake: use your fingers to rub the zest destined for your baked good into your granulated sugar. The rough sugar crystals will bruise the zest and bring out its flavors, and your end product will come out of the oven with an even deeper flavor.
