Have Your Cake and Drink It Too

It may be five o'clock somewhere, but we only want to be wherever this exquisite Gin & Tonic Cake is being made. Jessica, of food blog How Sweet Eats, recently cooked up this boozy concotion as a gift for her Grandpa's 80th birthday (a party we wish we were invited to). He didn't approve of her choice of gin, apparently, but after taking an informal poll of other family members, it appears that enjoyment of this beauty pends on your existing palate for the liquor: "My mom, who occasionally drinks gin but always drinks bourbon, could taste the gin and is still eating the cake for breakfast... as we speak," Jessica wrote. "Huge fan." As for Dad? "My dad looked at me like I was insane when I went to serve him a slice."

We think he'd be insane for not trying. But in case you still need convincing, we've included a gratuitious shot of the gin glaze puddling over the fresh-from-the-oven lime cake. It's below. We feel tipsy already.

Cassie loves to cook, eat, and then write about it. She can't resist anything with sweet potatoes, but if she had to pick one food for the rest of her life it might be avocado. (She changes her mind a lot.) She also believes that anything will taste better on a tortilla, and that tacos are the premier food of summertime. You can catch her reading Calvin & Hobbes on the stoop of her apartment, or on the roof in her garden. Say hello!
