I use an Ecconomie Inox Depose Fruit/vegetable peeler. (Made in France) It measures a mere 6 inches. It's the best! It suits me because I have small hands. I have used this even when under extreme distraction and have never injured myself (Or anyone else...lol)
i would go with a zester, which I've used for years (I think I purchased one at Williams-Sonoma). As Nancy mentioned, it has several small holes at one end -- mine has three -- and your fingers stay at a very safe distance.
Two suggestions - a micro-plane grater with a food guide (little plastic box that holds food and slides it along the grater). a zester (small tool with sharpened holes at one end, for removing peel).
Thanks Nancy. I've used a grater without much luck but the one you suggest might do the job. Only thing is if it's like the hand held one in pic, a moment of distraction could be wounding! Haven't used the zester. Unsure which way to go.
It's like the one in the photo, but with a plastic box on top, in which to put the food to be grated...so your fingers don't get too close to cutting edge. Look at both suggestions in a cookware store to see if you like one better.
@Syd W., I would use the micro-plane but not like the picture above. Hold the lemon in one hand and run the microplane across the lemon skin like in this photo (from this article, https://food52.com/blog/21802-ina-garten-s-trick-to-streamline-citrus-zesting)
