Our first taste of thick, sweet balsamic was a game-changer in the kitchen. Some vinegars produced and aged using traditional methods yield a much sweeter, denser syrup than the thin liquid-y kind you commonly find on the table. This bottle is exceptional -- it's got a nice balance of acidity to keep the sweetness from becoming cloying. Because of its complexity, it is best used sparingly on dishes -- use it on things like bruschetta or as a finishing element over pasta to really showcase its flavor.
