This is my great grandmother's recipe. Icelandic pancakes are very close to a french crepe. The star of this dessert is the whipped cream and jam and because so many people are making their own jams now, this dessert is the perfect way to celebrate all your hard work. Berry jam's work best! —Goldilocks

Ingredients
  • 1 cup flour
  • 3 eggs
  • 2 cups milk
  • 1/4 cup melted butter
  • fresh whipped cream(no sugar)
  • your favorite berry jam!
Directions
  1. mix to together making sure not to mix it too well. Using a crepe pan, pour about 1/4 cup of batter onto the pan and smooth out and cook until done, flipping midway.

  3. To assemble you place jam on one quarter of the pancake, add cream and fold four ways.

I received an Icelandic Pancake pan as a gift it is about eight inches round. I was not sure if they should be as thin as crepes, or thicker like Swedish Pancakes. I opted for the latter and I added a half teaspoon of cardamom. Very nice!
