Flaming Greek Cheese —Foodie-isms

Ingredients
  • 1 slice of Kefalotiri (Greek styled cheese)
  • 1 lemon wedge
  • 1/4 cup of flour mixed with salt & pepper
  • 1 shot Ouzo, Greek anise-flavored aperitif
Directions
  1. Mix the flour, salt, and pepper on a plate. Roll the cheese into the flour mixture to coat evenly.
  2. Heat equal parts of olive oil and butter in a cast iron skillet. When the pan is hot, fry the slice of cheese for about 90 seconds per side. Add and ounce of Ouzo to the pan and ignite. Opa!
  3. Remove pan from the heat. When the flames have extinguish move the cheese onto a serving platter.
  4. Squeeze the juice of the lemon wedge on the warmed cheese.

I was so excited when a couple of Greek restaurants opened in neighboring towns because I though it'd be a fun way to introduce some of the grandkids to saganaki and moussaka, and then I was so disappointed because neither one offers saganaki. Now Grandma's gonna be putting on her own show! Thanks for posting the recipe.

I lived in Chicago in the early 1970's after college. We loved a Greek restaurant, "Diana's" where the whole restaurant went "Oop-aah" (and drank) every time they flamed the saganaki. I have been searching for the name of this dish for years - thanks. Boy, it doesn't sound Greek, does it? Nonetheless, I know that it what we would order, so many years ago.
