Wash the parsley, remove the stems and chop fine. You can also pulse in a food proccessor. Add the eggs, onion and spices, mixing well. Heat the oil in a frying pan and when hot drop spoonfulls of the parsley and egg mixture into the pan, frying till golden brown on both sides.
To assemble sandwiches.....In a 1/2 a pita place 2 fritattas and sliced tomatoes.
