Grilled Pork Loin with Garlic

Ingredients
  • 1 2 pound pork loin roast
  • 1 head garlic
  • 1 teaspoon celery seed
  • 1 teaspoon medium chili powder
  • 1 teaspoon garlic salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon lowry's season all
Directions
  1. with a paring knife, make 1 deep slit into the pork at 2 inch intervals
  2. insert a sliver of raw garlic into each incision
  3. mix dry spices and rub into pork on all sides
  4. heat grill to 375 or 400
  5. place loin over indirect heat and cover
  6. turn every 7 minutes until all four sides have seared and are dry
  7. place over more direct heat and allow spices to mix with juices and create a crust
  8. once done (internal temp or 135/140), remove and let rest
  9. slice and serve

I love this recipe and I'm making it right now. However, I would sear the loin over direct heat and then move it to indirect heat to let it finish low and slow. Finishing it slowly will help make the loin even more tender and, dare I say, garlic-y-er. Thanks for this recipe!
