Tomato Confit Toast with Ricotta
"A crusty slice of bread, creamy ricotta, and tangy tomato confit make this dish perfect for any time of day. With its rich, herby flavors, it’s as impressive as it is easy to prepare.
Prep: Strain ricotta if can’t buy pre strained or pressed ricotta (they sell it at Whole Foods I believe, this brand would be perfect https://bellwetherfarms. com/product/whole- milk-basket-ricotta/)"—Lydia Keating & Max Baroni - 2
Melted Anchovy Toast by Renee Erickson
"This preparation is all about the anchovy. Salty, garlicky, and spicy. It's messy, oily, and addictive. This recipe actually was an accident. I had purchased some very fancy anchovies and was planning on just warming them to serve on toast, but they immediately liquified in the warm oil. And so I did what any rational person would do: I poured the resulting sauce onto a beautiful piece of toast and tasted it. So good, and among the easiest appetizers ever." —Renee Erickson

Salmon en Papillote with Mustard Mayonnaisse & Dill Gremolata
To cook something en papillote—in this case salmon—simply means to cook it wrapped in parchment paper. It’s an extra step, but the result is consistently moist, delicate, and astonishingly pure in flavor. The lightly seasoned fish steams in the parchment alongside par-cooked vegetables. For this recipe, I’m using turnips and seared fennel, but I often make it with parboiled potatoes and a blanched green vegetable(asparagus or green beans work well, for instance). This dish benefits greatly from a sauce, and below are two recipes that make a delightful duo and pair beautifully with the fish. It’s what I would consider a go-to healthy dinner, and even better, it’s delicious.

Chinese Celery & Turnip Salad
Thanksgiving is a time for abundance, but sometimes a lighter dish offers a welcome contrast on a table laden with rich foods. This Chinese Celery & Turnip Salad delivers big flavors and a satisfying crunch that’ll compliment your usual fare. Think of it as a palate cleanser—a refreshing counterpoint to the heavier dishes that grace the Thanksgiving table. Crisp celery and julienned turnip are woken up with a simple yet flavorful dressing, accented by aromatic ginger and garlic, and the subtle tingly heat of Sichuan pepper flakes.

Chunky Giardiniera
Giardiniera is an Italian condiment of pickled vegetables, which can vary slightly by region, especially across the United States, most notable interpretations found in cities like Chicago and New Orleans. My version is inspired by a medley of styles, features a chunky texture and a blend of flavors – tangy, briny, and subtly spicy. The brining process creates a really satisfying crunch which is a great addition to rich and fatty sandwiches.

Teriyaki & Sofrito Grilled Lobster Tails
I have very fond memories of all things teriyaki. As a teenager, my friends and I used to take the nearly hour-long subway ride to a Queens mall, specifically for the food court chicken teriyaki. Life has gotten a bit more complicated since then, and my palate has evolved quite a bit, but all things teriyaki have remained a comfort food staple for me. In celebration of summer grilling, I developed this grilled lobster tail teriyaki. A Japanese-inspired sofrito—a playful take on the Puerto Rican sofrito I know and love—is combined with Kikkoman® Teriyaki Marinade & Sauce and butter to baste juicy lobster tails as they grill. This combination would work well on chicken, shrimp, tofu, vegetables, or mushrooms, either on the grill or cooked in any way you choose.
