Ingredients
  • 2 lb pork loin roast
  • 1 tsp. salt
  • 1/4 tsp. ground pepper
  • 1 tsp light brown sugar, packed
  • 2 tbsp. Dijon style mustard
  • 2 tsp. water
Directions
  1. Heat oven to 180 degrees C.
  2. Sprinkle roast with salt and pepper
  3. Place on a rack in a roasting pan, fat side up. Roast about 2 hours,
  4. Mix brown sugar, mustard and water. Brush pork with about half the sugar mixture, roast 15 minutes.
  5. Brush with remaining sugar mixture and roast 15 minutes longer.
  6. Put roast on a serving platter

I made this for dinner this week and it was absolutely delightful! One note is that if you are using a boneless pork roast, you won't need to cook it for quite so long. I initially seared the boneless roast in a 450 (F) oven for about 20 minutes and then lowered the heat to 325 (F) and cooked it for another 45 minutes or so. It came out really juicy and fully flavored.
