Quinoa is a miracle grain that provides plenty of protein for meat eaters and veg-heads alike. Raw honey should be an essential part of everyone's diet, with plenty of enzymes to keep the body movin' and groovin'. Coconut milk gives the body one of the most deprived goodies... Omega 3's! Ingredients
  • 1 cup quinoa
  • 1.5 cups water
  • 1 cup coconut milk
  • 1 tablespoon cinnamon
  • 1 tablespoon nutmeg
  • 1 tablespoon honey
Directions
  1. (Always soak your grains for hours before cooking and consuming. This removes Phytic Acid from the grain, which prevents calcium absorption.) Place water and quinoa in small saucepan and bring to a boil. Reduce to simmer and cover for 12-15 minutes, until water is boiled out.
  2. Leave quinoa in saucepan and add coconut milk. Keep on simmer, cover and allow quinoa to soak up coconut milk. After about 15 minutes, add cinnamon and nutmeg. Once the quinoa is at a consistency of your liking, (depending on if you would rather it a bit more soupy or grainy) remove from saucepan and place in bowl. Let sit for 20 minutes to cool, then add honey. (Waiting is crucial so that the enzymes are not sacrificed in honey!)
  3. Serve and enjoy!
