Lemon Kiwi Cocktail

Ingredients
  • 1 large lemon
  • 9 large, ripe kiwis
  • 2 1/4 cups Gin
  • 1 cup lemon juice
  • 1 1/4 cups St. Germain
  • 2/3 cup granulated sugar
  • 1 teaspoon salt
  • 3 cups ice
  • 2 cups club soda
Directions
  1. Cut 8 medium size lemon slices, cover and place in refrigerator. Peel and thinly slice 4 kiwis. Line a rimmed baking sheet with parchment paper. Arrange kiwi slices in single layer on prepared sheet. Place in freezer. Freeze until solid.
  2. Peel, puree and strain 5 kiwis. Combine Gin, lemon juice, St. Germain, sugar, salt, kiwi puree and 3 cups ice in a large pitcher. Refrigerate until chilled. Stir club soda into pitcher. Pour cocktail into glasses, add a few frozen kiwis to each glass, garnish with lemon slices and serve.

I did prepare frozen slices of kiwi and the result was hardly something I would want to put in a cocktail. They quickly defrost into little ovals of mush.
