One of our favorite ways to eat kale or potatoes for that matter is in Colcannon.
There are many versions of this tasty Irish Dish. After seeing a few recipes for mashed potatoes with horseradish in the Horseradish Contest I decided to add some horseradish to my colcannon.
Darby loved the little kick it added.

I always serve Colcannon on St. Patricks Day along with Corn Beef and Irish Soda Bread. But, we have it all year round with beef, pork and chicken. Then again, we have been know to eat just Colcannon for dinner. —GiGi26

Ingredients
  • 6 Good Sized Potatoes
  • 1 Bunch Kale
  • 2 or 3 Leeks (depending on their size) white and light green parts only
  • 3 generous tablespoons horseradish
  • 1/3 cup butter
  • salt and pepper to taste
Directions
  1. Clean and chop kale and set aside
  2. Clean and slice leeks
  3. Peel and cube potatoes
  4. Put potatoes and leeks in a large pot with enough water to cover. Boil until about 2/3 of the way tender.
  5. Add the kale and continue cooking until all the vegetables are fork tender.
  6. Drain and return to the pan.
  7. Add horseradish. Season with salt and pepper to your taste.
  8. Add butter and mash as you would mashed potatoes. You will want to use a potato masher not your hand mixer for this step. Add milk to your desired consistancy.

Just made this and the horseradish in it is a brilliant idea. I used Swiss chard, extra leeks and a dollop of mustard. So good!
