Ingredients

1 tablespoon
extra virgin olive oil

onion, chopped

leeks, chopped

head of Cauliflower

water or vegetable stock
-
a few sprigs of fresh thyme

salt & pepper

lemon juice & zest {optional}
Directions

Start by adding olive oil to a large pot over medium to high heat.

Saute the onion and leeks till tender, then add garlic until fragrant.

You can now add the Cauliflower florets to the pot.

Cover with water or vegetable stock and bring to a simmer.

Once the Cauliflower is tender, season with fresh thyme, salt & pepper.

I like to use an immersion blender to puree the soup.

You can also use a blender or food processor.

Just be sure to work in batches.

Stir in lemon juice and zest.

Serve hot!
