What You'll Need
Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 15 oz. can of Chickpeas
  • salt & pepper to taste
Directions
  1. Pre-heat oven to 450 degrees.
  2. Drain and rinse Chickpeas, toss in a bowl with olive oil and salt & pepper.
  3. Spread out on a baking sheet and bake till crispy, about 30 minutes.
  4. Check on them at 20 minutes, shake the sheet pan to move them around.
  5. Optional~ add any spices that you like and make it your own!

Saw this recipe in this month's Food Network Magazine, glad it works! I would add spice for more zing, but nice to see a crunchy snack with some protein!

Thanks, I love roasted veggies, but never thought of doing chickpeas. Before I try this, could you describe how the flavor might be different from just warming them in a pot? Also, do you need to serve them right away, or will they hold up for a while?

Roasting the chickpeas makes them crunchy and gives them a nutty flavor. You can add any spices to them that you like. Eating them right away is best but you can store than for a few days and they will be fine.
