Ingredients

1.5 cups
quinoa
-
3 cups
broth or water

chicken thighs

1
onion or leek
-
olive oil
Directions
-
Heat olive oil in pan with onions or leeks
-
add chicken.. cook on both sides for a few minutes
-
add 3 cups broth or water
-
add 1.5 cups quinoa
-
cover and cook on lower temperature
-
Serve warm!
