It's drab and dreary outside and I am hoping for some sunshine. So in a bid to coax some sunshine out from the clouds, here is my (anti) weather inspired salad. Let's hope this does it!

Ingredients
  • 2 medium golden beets 1 medium jicama 1 stalk scallion 2 Tbsps. chopped cilantro 1 Tbsp. toasted sunflower seeds (optional)
  • 1 Tbsp. Extra-Virgin Olive oil 2 Tsps. orange juice 1/4 tsp. cumin powder 1/4 tsp. coriander powder 1/2 tsp. sugar salt and pepper to taste
Directions
  1. Peel and cut the beets into thin slices, and then stack the slices to cut into thin matchsticks.
  2. Peel and cut jicama into thin slices, and then stack the slices to cut into thin matchsticks
  3. Finely slice the scallions; both the green and white parts Mix the beets, jicama, scallions and the chopped cilantro in a bowl.
  4. In a separate bowl, mix all the dressing ingredients and mix it in with the salad. Sprinkle some sunflower seeds if using. Toss and serve.
