Author Notes: I was craving the famous Italian salad this morning, and after standing in front of my fridge looking at what I had, this is what I came up with! Can't wait for lunch time now!! :) —Naina Lal
- 1 small whle grain roll
- 1 small organic sweet potato
- 1/2 red onion, sliced
- 1 small tomato
- 1-2 Tbsp basil leaves
- 1 Tbsp. parsley; chopped
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Olive Oil
- Boil the sweet potato for 10 minutes and peel and chop into big chunks.
- Toast the bread and cut into big chunks.
- Mix all the ingredients including the oil, vinegar and salt and pepper. Toss and eat.
