Author Notes: I was craving the famous Italian salad this morning, and after standing in front of my fridge looking at what I had, this is what I came up with! Can't wait for lunch time now!! :)Naina Lal


Serves 1

  • 1 small whle grain roll
  • 1 small organic sweet potato
  • 1/2 red onion, sliced
  • 1 small tomato
  • 1-2 Tbsp basil leaves
  • 1 Tbsp. parsley; chopped
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Olive Oil
  • pepper
  1. Boil the sweet potato for 10 minutes and peel and chop into big chunks.
  2. Toast the bread and cut into big chunks.
  3. Mix all the ingredients including the oil, vinegar and salt and pepper. Toss and eat.
