Mango Peach Cilantro Salsa

I went on a trip to Port St. Lucie to see and old friend that I had not seen in over ten years. Cindy brought some salsa that inspired me to create this recipe. I have tried mixing it up some with this recipe and have found this recipe to be my favorite. My family and friends even my oldest grandson Gregory loves it a lot!!! I eat this salsa by the spoon full without any chips sometimes. It is excellent for marinade too :) —Merri Lee

What You'll Need
Ingredients
  • 1 1/4 tablespoons Garlic
  • 1 large handfuls Cilantro
  • 1 Lemon
  • 1 Crisp Fresh Jalapeno
  • 1/2 cup Ripe Tomatoe
  • 8 Mangoes
  • 4 Peaches
  • 1/2 Crisp Fresh Bellpepper
Directions
  1. Begin by cutting mangoes, tomatoes and peaches into small pieces, squeeze half of the lemon over mangoes and peaches. Dice into very small pieces (crisp) fresh red bellpepper, garlic and jalapeno, add to mangoes and peaches. Chop a large handful of cilantro and add to the other ingredients, squeeze remaining half of the lemon, stir gently. refrigerate for about 1 hour before serving.
