In the interest of full disclosure, I'm stealing this recipe from Jamie Oliver. It's too good and too simple not to share. I added the coconut so that the flavor comes closer to that of a Piña Colada. —SweetArlene

What You'll Need
Ingredients
  • 1 Pineapple
  • 1/3 cup Sugar
  • 1 cup Mint leaves
  • 1/4 cup Shredded coconut
Directions
  1. Cut your pineapple into chunks. Smash the mint and sugar together in a mortar until the sugar turns green. Coat the pineapple with the mix and sprinkle the coconut on top. Serve immediately.
